This morning I made coconut banana french toast, a recipe from a kitchen I use to cook in, it's a good use for leftover coconut milk.
It is exactly as the the name suggests: 1 banana, 1 can of coco milk, and about 4 eggs
mash banana and mix all together. I usually half the recipe for two people, its good with honey or maple syrup. enjoy!Posted by Picasa

Yum! How decadent! So do you kind of mush the mashed banana into the bread and then fry it?

sorry its taken so long to get back, if your still interested, you mash the banana, then mix in coco milk and egg, I have a hand mixer that works well, but a fork gets the job done, the nana just sticks to the bread, then fry it.

Today is Easter and I made this for the boyz and Mike...plus I cooked up some bacon'...super delishy yummy!
