Spinach Dip

Sorry I don't have a picture for this, but I'm posting about it anyway because you should all add this to your repertoire of quick, delicious, party dips (you do have a repertoire of those right?). It's 3 ingredients: cream cheese (I used neufchatel), frozen spinach, and salsa. I also added a bit of cumin and garlic salt. Jim had some of the fellas over practicing last night and I always like to prepare a little snack tray for them. They all absolutely crushed this dip. It was surprisingly excellent! ---Skye

I thought about taking a picture this morning of the dip residue left on the bowl that Jim left out all night, but it was kinda gross looking.

That's funny because this is already on my repertoire of dips. Michael didn't care for the addition of spinach to a "mexican style" dip, but I looked at it more as an addition of spicy flavor to a creamy spinach dip. Anyway, I took it to a gathering recently and a few people devoured it, a few people didn't touch it. Speaking of getting your spinach in, I've been adding fresh spinach to all egg dishes I make for Molly and she's gobbling it up. It almost loses it's flavor in eggs I think.

There's a delicious jalepeno popper dip that I could eat as a meal. I found it under the ten most popular appetizers and made it for a party. I didn't get to try it till I got there but once I took a bite, I knew I'd make it the next day just for myself. http://allrecipes.com/Recipe/Jalapeno-Popper-Spread/Detail.aspx
It really goes best with homemade crostinis.
